Canadian Bacon and Egg Thingies.

I can’t remember where I first saw the recipe for these Canadian Bacon and Egg Thingies. I looked through my paleo cookbooks (Everyday Paleo,  Everyday Paleo Family Cookbook, Paleo Slow Cooking, Paleo Comfort Foods and Primal Blueprint Healthy Sauces, Dressings and Toppings). I couldn’t spot it. So I must have seen it somewhere on the internet.


Anyways, I had to go off of memory and basic cooking knowledge.

They are crazy easy to do. You need a regular muffin tin with 12 muffin holes. How many you make is up to you and the amount of Canadian bacon, eggs and hungry faces that you have on hand.

Preheat oven to 350 degrees.

To help keep things from sticking you can coat the muffin tin holes with grass-fed butter or coconut oil. For myself I will usually melt a tablespoon at a time of gf butter or coconut oil in a small microwave safe bowl for about 10-20 seconds or until melted. Then using a basting brush I coat the insides of the tin holes.

Place a piece of round Canadian Bacon in each of the holes you are using. Don’t worry that they don’t nest in like a coffee filter, because they won’t. Then crack an egg into each hole that has bacon in it. Again, don’t worry that the egg is not centered on the bacon.

Stick the muffin tin in the oven. If you like your egg runny, I would recommend 15 minutes. If you want it more cooked then go for 20 minutes.


The Canadian bacon shares its flavor with the egg. Want something a little spicier? Add some sriracha sauce, which can be found at most grocery stores in the Asian foods aisle.

I think this will make a nice addition to my family’s breakfast choices. Nobody in my house has an adventuresome palate in the am.  The flavor of these are delicate enough to keep sourpuss looks outta my kitchen! Plus, they are very easy to prepare and cook. Important when getting a crew off to school.
