“Grab What There Is” Slow-Cooker Chicken.

The night before last I set out a package of frozen chicken, thighs and legs. I knew the next night’s dinner would be a slow-cooker night. It wasn’t till in the late morning that I decided to rummage for stuff to make it tasty. Hopefully.

Here’s what I found;

half of a jar of Trader Joe’s Salsa Authentica (basically a mild red salsa. Half a jar would make it 6 oz.)

about half of a yellow onion that was minced (I think it was from a week ago when we had Menudo).

some fresh cilantro that was no longer fresh. It wasn’t rotten, but pretty wilted. Not fit for a “fresh” dish.

I put the chicken in the slow-cooker and splashed it with some lime juice (prepared stuff in a bottle). Put all of my scrounged up ingredients into the half empty salsa bottle with a TBLS. of ground cumin. Stirred it up and poured it over the chicken. Using my hands, I made sure that the salsa mix coated each piece of chicken.

Set the slow-cooker for 8 hours (low).

IMG_0861  It ain’t crazy pretty, but it was tasty!

I served it will some white rice and leftover salad. Richard recommended chicken breasts for next time.
